Montefiore Cheese Facility Expansion and Trade Waste Planning

Project Overview

Why data matters
planning with confidence

As demand for its award-winning fresh cheese products continued to grow, Montefiore Cheese embarked on a major facility expansion and refurbishment project to support future production requirements. A key component of the development involved relocating and upgrading the site’s trade waste infrastructure to accommodate increased production capacity and a revised facility layout.
Before committing to the design of a new system, Montefiore partnered with SampleScience to gain a detailed understanding of the site’s actual wastewater characteristics, ensuring future investment decisions were based on real operational data rather than assumptions.

The Challenge

Designing a trade waste system for a growing food manufacturing facility requires more than estimating future production volumes. Wastewater characteristics can vary significantly depending on production schedules, cleaning processes, seasonal demand, and operational changes.

Montefiore needed answers to several critical questions:

  • What volumes of wastewater were being generated?
  • How did flow rates vary throughout the day and across production cycles?
  • What were the typical pH and temperature profiles?
  • How would current operating conditions compare with future expansion requirements?

Without accurate data, there was a risk of under-sizing critical infrastructure or investing in a system larger and more costly than necessary.

Our Approach

To provide the information needed for confident decision-making, SampleScience deployed one of our Rental Trade Waste Monitoring Systems at the facility.

The temporary monitoring program was designed to capture real-world operating conditions over an extended period, providing a comprehensive picture of the site’s wastewater profile.

The monitoring system continuously recorded:

  • Trade waste flow rates
  • Total wastewater discharge volumes
  • pH trends
  • Wastewater temperature
  • Variations during production periods
  • The impact of cleaning and
    washdown activities

By collecting data across multiple operational cycles, the system provided a clear understanding of how wastewater characteristics changed over time and highlighted the factors influencing trade waste performance.

The Solution

Following the monitoring program, SampleScience analysed the data and worked closely with the Montefiore team to assess current performance and future requirements.

The findings formed the foundation for a strategic roadmap that would guide the design and implementation of the new trade waste infrastructure.

Rather than relying on theoretical calculations or industry averages, Montefiore was able to make informed decisions based on verified site-specific data. This ensured future infrastructure planning accurately reflected actual operating conditions and anticipated production growth.

Results and Outcomes

The monitoring program delivered valuable insights that reduced uncertainty and improved confidence throughout the planning process.

Key outcomes included:

  • Accurate understanding of the facility’s wastewater profile
  • Reliable data to support future trade waste system design
  • Improved assessment of capacity requirements for planned expansion
  • Reduced project risk through data-driven decision-making
  • Greater confidence in future capital investment decisions
  • A tailored roadmap for trade waste infrastructure upgrades

By establishing a clear baseline of current operations, Montefiore was able to plan its expansion with confidence, ensuring the future trade waste system would be appropriately sized to support both current production and long-term growth.

Supporting Smarter Infrastructure Decisions

Montefiore Cheese’s expansion project demonstrates the value of understanding your wastewater profile before designing new infrastructure. By collecting and analysing real operational data, SampleScience helped provide the clarity needed to support informed planning, minimise risk, and develop a trade waste solution aligned with the company’s future growth objectives.
